Sour Cream Candied Pecans
Makes 4 cups
4 cups pecans (or walnuts)
1/2 cups white sugar
1 cup brown sugar
1/2 cup sour cream
1 teaspoon vanilla
1. toast nuts in oven at 250 degrees for 10 minutes
2. butter sides of a 2 quart saucepan
3. boil sugars and sour cream on medium heat to the soft ball stage (240 degrees on a candy thermometer), stirring constantly
4. remove from heat, add vanilla and stir
5. add nuts and stir until all are covered
6. spread out on foil to cool, pulling apart the nuts while still warm so none are stuck together
7. try to keep from eating the entire batch in one sitting :)
