Peppermint Shortbread Cookies
My mom used to make these every year and now, so do I! It doesn't feel like it's really Christmas until I'm sitting next to our sparkling Christmas tree at night, listening to carols, with a cup of eggnog and a couple of these cookies!
Peppermint Shortbread Cookies
Makes about 2 dozen
2 1/4 cups flour
1 teaspoon peppermint extract
1/4 teaspoon salt
1 cup powdered sugar
1 cup butter (softened)
1. Preheat oven to 350.
2. Beat together butter and sugar until fluffy.
3. Add remaining ingredients and mix well.
4. Use a small cookie scoop to scoop into walnut sized balls and flatten with the heel of your palm.
5. Bake on a parchment paper covered cookie sheet for 8-10 minutes, until tops are dry but DO NOT BROWN!
6. Cool completely and then drizzle with peppermint icing and enjoy! :)
Peppermint Icing
1 teaspoon peppermint extract
1 cup powdered sugar
1 cup powdered sugar
3 drops of red food coloring
1 1/2 tablespoons milk
1. mix well and drizzle over cool cookies
2. that's it! :)
